Tom Collins comes together as an iconic gin cocktail from the 19th century that ranks among the timeless classics of the bar. You pour gin, fresh lemon juice, and simple syrup into an ice-filled shaker in a 50:25:15 ratio and shake vigorously for 12-15 seconds. You strain it through a fine strainer into a tall glass with fresh ice, top with soda water, and stir gently. You garnish with a lemon slice and a cocktail cherry and serve with a straw.

Step by step process

Make the cocktail

    Fill a tall Collins glass with a few ice cubes and let it stand for 1-2 minutes to chill thoroughly. A pre-chilled glass holds the fizz longer and keeps the drink cold to the last sip.

    Pour the gin, freshly squeezed lemon juice and simple syrup into a shaker. A good starting ratio is 50 ml gin: 25 ml lemon juice: 15-20 ml syrup. Add 4 ice cubes and shake vigorously for 12-15 seconds until the outside of the shaker feels ice-cold.

    Strain the mixture through a fine strainer. Taste and fine-tune the balance: more syrup for a sweeter version, a few drops of lemon juice for a sharper edge.

    Discard the ice from the chilled glass and replace it with fresh ice, which melts more slowly and will not dilute the cocktail.

    Pour the strained mixture over the ice. Top with soda water (60-90 ml) and gently stir from the bottom up 2-3 times with a long spoon so the drink combines without losing its bubbles.

More tips:

Use only freshly squeezed lemon juice. Store-bought juice has a flatter taste and lacks the natural acidity that makes a tom collins come alive.

For a less sweet cocktail, reduce the simple syrup to 10 ml or swap it for agave syrup for a softer character.
