Step by step process

Preparation

    Place a few ice cubes in a tall (Collins) glass to chill it (1-2 minutes).

    TIP: 

    Chill the glass with ice and a splash of cold water for 1-2 minutes, then drain the water and dry the glass. This will keep the drink colder for longer.

    Pour the gin, freshly squeezed lemon juice, and simple syrup into a shaker or measuring jug. For guidance, use approximately 50 ml gin : 25 ml lemon juice : 15-20 ml syrup. Add ice and shake vigorously for 10-15 seconds until well chilled.

    TIP: 

    Shake cocktails with plenty of ice in a shaker for 10-15 seconds to thoroughly chill the drink and balance the flavors. When straining, use a fine-mesh strainer to remove ice chunks.

    Strain the mixture through a fine strainer into a jug or preparing vessel for pouring. Taste and adjust the sweetness by adding more syrup or acidity by adding more lemon juice if needed.

Serving

    Discard the ice from the chilled glass and fill it with fresh ice.

    Pour the strained mixture over the ice, top with soda water (approx. 60-90 ml), and gently stir with a long spoon for 2-3 turns so the drink combines without losing its effervescence.

    Garnish with a lemon slice and optionally a cocktail cherry. Serve immediately with a straw.

    TIP: 

    Create a thin strip of lemon zest, gently rub it over the drink to release the aroma, and place it on the rim of the glass. For a more pronounced aroma, squeeze a drop of oil onto the strip.

More tips:

For an even fresher flavor, use fresh lemon juice instead of bottled lemon juice.

If you prefer a less sweet cocktail, reduce the amount of simple syrup to taste.
