Zander in Lemon Butter

Preparation

Clean the zander fillets, remove any bones if necessary, rinse, and pat dry with paper towels.

Lightly season each fillet with salt and pepper on both sides.

Wash and dry the lemon, grate a little zest, and squeeze out the juice. Set the zest and juice aside.

Place all-purpose flour on a plate or shallow dish and coat the fillets on both sides.
Cooking

Heat the olive oil with half the butter in a large skillet over medium heat.

Place the zander fillets skin-side down, if the skin is left on, and fry for 3-4 minutes until golden.

Turn the fillets and add the remaining butter. fry another 2-3 minutes until the fish is tender and the surface is lightly golden.

Towards the end of frying, spoon the freshly squeezed lemon juice over the fish and add some of the lemon zest.

Adjust seasoning with salt and pepper to taste.
Serving

Transfer the finished fillets to plates and sprinkle with finely chopped parsley.

Serve warm with lemon slices and ideally with boiled potatoes or crusty bread.
More tips:
You can drizzle a few drops of lemon on the other side of the fillets before frying for a more pronounced citrus flavor.
Fry the zander ideally in a heavy-based pan over medium heat so the surface becomes nicely crispy while the flesh stays juicy.
