Preparation

Start preparing zander in lemon butter by cleaning the fillets, removing any bones if needed, rinsing, and patting dry with paper towels.

Lightly season each fillet with salt and pepper on both sides.

Wash and dry the lemon, grate a little zest, and squeeze out the juice. Set both aside.

Place flour in a shallow dish and coat the fillets on both sides.
Pan-Searing

Heat olive oil with half the butter in a large skillet over medium heat.

Place the zander fillets skin-side down, if skin is left on, and fry for 3-4 minutes until golden.

Turn the fillets and add the remaining butter. Fry another 2-3 minutes until the fish is tender and the surface lightly golden.

Towards the end, spoon freshly squeezed lemon juice over the fish and add a little lemon zest.

Season with salt and pepper to taste.
Serving

Transfer the fillets to plates and sprinkle with finely chopped parsley.

Serve warm with lemon slices and ideally with boiled potatoes or fresh bread.
More tips:
Drizzle a few drops of lemon on the other side of the fillets before frying for a more pronounced citrus flavor.
Fry the zander in a heavy-based pan over medium heat so the surface becomes nicely crispy while the flesh stays juicy inside.
