Grilled Catfish with Lemon and Herbs

Marinating

Prepare the grilled catfish by patting the fillets dry and placing them in a bowl. Pour over the olive oil, juice of one lemon, pressed garlic and thyme leaves. Season with salt and pepper and let rest for 15 minutes.

Cut the second lemon into wedges for serving later. Finely chop the parsley and set it aside.
Grilling

Heat the grill to medium-high and brush the grate with oil so the fish does not stick. Place the fillets skin side down.

Grill for 5 to 6 minutes until the skin turns golden and crisp. Then carefully flip the fillets with tongs and grill for another 3 to 4 minutes until the flesh turns white in the center and flakes easily.

Slice the zucchini, bell pepper and eggplant, brush them with oil and grill on both sides until tender. Sprinkle the finished fillets with chopped parsley and serve with the grilled vegetables and lemon wedges.
More tips:
Let the fillets sit at room temperature for a while before grilling so they warm up evenly and stick less to the grate.
