Grilled Mackerel with Mediterranean Herbs and Lemon

Step by step process
Preparation and marinating

For the marinade, mix olive oil, juice of half a lemon, crushed garlic, thyme leaves, and rosemary sprigs.

Clean the fish inside and out, pat dry with kitchen paper. Score the skin diagonally 3 times on each side - this helps even cooking and allows the marinade to penetrate.

Rub the marinade into the scores and cavity of the fish, season with salt and pepper. Leave to marinate for 15-20 minutes at room temperature.
Grilling or baking

On the grill: heat the grill or griddle pan to medium-high heat, lightly brush the grill with oil. Place the fish on the grill and cook for 5-6 minutes on each side until the skin is golden and crispy.

In the oven: preheat the oven to 220 °C. Place the fish on a baking tray lined with parchment paper and bake for 20-25 minutes. In the last 5 minutes, switch on the top grill for a golden skin.

Transfer the cooked fish to a plate, garnish with fresh parsley and slices of the remaining lemon. Serve immediately.
More tips:
Scoring the skin lets the marinade sink in and cooks the fish evenly.
Do not overgrill the mackerel, 5-6 minutes per side is enough or it dries out.
