Preparation

  1. 1

Cut each lime into quarters, squeeze the juice from one quarter per serving directly into a tall glass (ideally a highball or Collins).

  2. 2

Drop the used lime quarter into the glass. it will give the drink a fresh citrus aroma for the duration of drinking.

  3. 3

Fill the glass about two-thirds full with ice cubes.

Mixing

  1. 4

Pour 50 ml of white rum into each glass over the ice.

  2. 5

Top up with chilled cola to the rim and gently stir once or twice with a long spoon from bottom to top, so the ingredients combine without losing carbonation.

Serving

  1. 6

Serve immediately while the drink is icy and fizzy, you can garnish the glass with a lime wheel or quarter on the rim.

More tips:

Use a good-quality Cuban or Caribbean white rum, cheap rums can leave an unpleasant aftertaste that cola won't hide.

Always add freshly opened, well-chilled cola so the drink keeps maximum carbonation.
