Hot ground paprika is a dried and finely ground powder made from spicy varieties of pepper (Capsicum annuum). It has a deep red color, a robust spicy aroma, and a distinctive heat that adds color and depth of flavor to dishes. It is widely used in goulash, sausages, marinades, roasted potatoes, and oriental spice blends. Beyond its flavor, it provides a high content of carotenoids, vitamin A, and vitamin E. It must not be scorched during cooking, as it turns bitter, so it is typically added away from direct heat.
