Kitfo ranks among the most celebrated dishes of Ethiopian cuisine and always draws attention at the table. Finely minced beef is blended with melted spiced butter and a mix of fragrant spices, which gives it a deep color and a bold aroma. It is traditionally served either barely warmed or completely raw, alongside soft fresh cheese and sour injera bread. Step by step process

Preparing the spiced butter

    Start the kitfo by preparing the spiced butter. In a small pot over low heat, melt the butter until fully clarified. Add ground hot paprika, ground cardamom, ground cumin, ground ginger and ground cloves. Stir for 2 minutes and remove from the heat.

    Let the spiced butter cool for 5 minutes. It should carry the intense aroma of all the spices, the foundation of an authentic flavor.

Preparing the meat

    Knead the minced beef thoroughly in a bowl. Gradually pour in the spiced butter and work it into the meat until evenly distributed. Add the lemon juice, season with salt to taste and knead again.

    Serve the finished meat raw in the traditional Ethiopian way, or briefly warm it in a pan for 2 to 3 minutes for a medium result. Serve on injera or bread with fresh cheese alongside.

More tips:

Do not scorch the butter, or it turns bitter and overwhelms the spices.

Prepare the meat just before serving, raw beef loses freshness fast.
