Quindim Brazilian coconut egg yolk dessert

Quindim ranks among the best known sweets of Brazilian cuisine and comes from the region of Bahia, where Portuguese nuns first turned egg yolks into desserts. Its vivid yellow color comes from a large amount of yolks bound with sugar and grated coconut. Baking in a water bath gives it a dense, glossy and almost translucent texture that resembles caramel pudding. The flavor is richly sweet. The coconut keeps it fresh.

Step by step process

Preparing the mixture

    For quindim separate the yolks from the whites and in a bowl stir them with sugar until smooth. Mix in the melted lukewarm butter and finely grated coconut.

    Let the finished mixture rest for 15 minutes so the coconut soaks up moisture and all the flavors blend nicely.

Filling the molds

    Grease small molds or a muffin tin with butter and dust them with sugar. Fill them with the mixture almost to the rim.

Baking in a water bath

    Place the molds in a deep roasting pan, pour hot water halfway up their height and bake in a water bath at 160 °C for about 35 minutes, until the top turns golden and the dessert firmly holds its shape.

Serving

    Let the baked dessert cool completely and then carefully turn it out onto a plate. The glossy coconut side flips to the top.

More tips:

Do not discard the whites, use them for meringues, an omelet or batter.

Just stir the yolks, do not whip them into foam, or the top will not stay smooth.
