Brazilian caramel flan pudim de leite

Pudim de leite is one of the most beloved Brazilian desserts, present at every family celebration from Rio to countryside kitchens. It resembles French crème caramel, yet it is denser and sweeter because sweetened condensed milk forms the base. It is baked slowly in a water bath so it stays silky smooth and free of bubbles. Once chilled, it is turned out onto a plate and bathed in liquid caramel. It is a dessert that tastes like childhood.

Step by step process

Caramel

    For the pudim de leite, first make the caramel. Melt the sugar in a dry saucepan until golden, then pour it straight into a bundt tin. Coat the sides of the tin with it too.

The custard

    In a bowl, whisk the condensed milk, milk, eggs and vanilla sugar into a smooth liquid. Do not whip it hard. Bubbles would spoil the silky surface.

Baking in a water bath

    Pour the mixture into the caramel lined tin. Place the tin in a roasting pan and pour hot water up to half its height. Bake in the water bath at 170 °C for about 50 minutes.

    You can tell the flan is done when the center still wobbles slightly. Take it out of the bath and let it cool completely.

Chilling and serving

    Chill the cooled flan for at least 4 hours, ideally overnight. Then carefully invert it onto a plate. The caramel runs down the sides.

More tips:

Melt the sugar over low heat and do not stir, or it crystallizes into hard lumps.

Chill the flan overnight, then the caramel soaks in and the flavor deepens.
