Brazilian arroz de carreteiro with beef

For the arroz de carreteiro, cut the beef into cubes, finely chop the onion and garlic and cut the tomatoes and pepper into smaller pieces. Rinse the rice under cold water to wash off the excess starch.
Browning the meat

Brown the beef on all sides in the oil. Add the onion and garlic and saute them until translucent.

Stir in the chopped tomatoes and pepper and simmer them until they soften and release a little juice.
Cooking the rice

Add the rice, toast it briefly in the fat and pour in the hot water. Season with salt and pepper and bring to a boil.

Cover and cook over low heat for about 18 minutes, until the rice absorbs all the water and turns tender.
Serving

Fluff the finished dish with a fork, sprinkle with chopped spring onion and fresh parsley and serve it hot straight from the pot.
More tips:
Use dried beef called charque or carne seca. Soak it before cooking and change the water once.
Use beef broth instead of water for a richer flavor. Leftover roast meat also works perfectly.
