Brazilian chicken stroganoff, known locally as estrogonofe de frango, is a South American take on the Russian classic that turns up on family tables all over Brazil. Chicken breast simmers in a silky sauce built from tomato ketchup, mustard and cream, which makes the dish gently sweet and comforting at once. It is traditionally served over white rice with a handful of crisp potato sticks called batata palha. This is a quick, homey dinner the whole family will happily share.

Step by step process

Preparation

    For the Brazilian stroganoff, first cut the chicken breast into strips and finely chop the onion with the garlic. Clean the mushrooms and slice them.

Making the sauce

    Saute the onion and garlic in butter until translucent, add the chicken and cook until it turns white on all sides.

    TIP: 

    Sauté the onion over medium heat until golden or translucent. Add the garlic at the end and sauté briefly to release the aroma, but do not burn it.

    Stir in the sliced mushrooms and cook them until they release their water and it evaporates again.

    Add the ketchup, mustard, salt and pepper, warm briefly, then pour in the cooking cream. Stirring constantly, let the sauce bubble until it slightly thickens.

Serving

    Serve the finished dish hot with cooked rice and crispy potato sticks called batata palha. Garnish it with fresh parsley.

More tips:

Brazilian stroganoff is traditionally served with batata palha, crispy potato sticks. Buy them ready made or fry thin potato matchsticks yourself.

Instead of chicken you can use beef strips. For a meatless version add more mushrooms and keep the sauce the same.
