Brazilian escondidinho with ground beef
Ingredients
Step by step process
Preparing the cassava
- 1
For the escondidinho, peel the cassava, cut it into smaller chunks and boil it in salted water until tender, about 30 minutes. Remove the tough fiber from the center.
Ground beef
- 2
Saute the onion and garlic in butter until translucent, add the ground beef and cook until it browns nicely.
- 3
Stir in the tomato puree, salt and pepper and simmer the meat for another 10 minutes so the flavors blend.
Cassava puree
- 4
Drain the cooked cassava and mash it with warm milk and a piece of butter into a smooth puree. Season it with salt.
Baking
- 5
Spread half of the puree in a baking dish, layer the ground beef on top and cover with the remaining puree. Sprinkle the surface with grated cheese.
- 6
Put the dish in an oven preheated to 200 °C and bake for 20 minutes until the cheese turns golden.
Serving
- 7
Let the finished casserole rest for 5 minutes and serve it hot with a light vegetable salad.
More tips:
Swap the cassava for sweet potatoes or regular potatoes for a milder, sweeter mash.
Press the puree through a potato ricer for a smoother, lump-free texture.
