Egyptian mahshi peppers stuffed with rice and ground beef

Mahshi is one of the best loved dishes of Egyptian cooking, and versions of it turn up across the whole Middle East. The word simply means stuffed, and almost any vegetable that holds its shape gets the treatment. Here peppers take the lead, filled with rice, ground beef and warm spices. The dish smells of cinnamon, cumin and fresh parsley, and it feeds the whole family with ease.

Step by step process

Preparing the mahshi filling

    Mahshi peppers begin with a fragrant filling. Heat two tablespoons of olive oil in a pan and sauté the chopped onion for about five minutes until golden. Add the pressed garlic and ground beef and cook for roughly seven minutes, until the meat browns.

Preparing and stuffing the peppers

    Wash the peppers, cut off the tops and remove the seeds and white membranes. Keep the tops aside to use as lids.

Cooking in tomato sauce

    In a deep pot, stir two tablespoons of tomato paste with four hundred milliliters of water and the remaining tablespoon of oil. Bring it to a boil.

Serving

    Carefully lift the peppers out of the pot and pour the tomato sauce over them. Sprinkle with fresh parsley and serve hot with pita bread or rice.

More tips:

Choose peppers of similar size with a flat base so they stand upright in the pot.

Let the cooked peppers rest a few minutes so the filling sets and slices cleanly.
