Traditional South African bobotie made from ground beef

Bobotie is a South African classic that you will find in almost every household there. The minced beef is seasoned with curry and turmeric, enriched with sweet apricot jam, raisins and almonds, and finally covered with a delicate layer of egg custard. As it bakes, a golden crust forms on top while the meat underneath stays juicy and fragrant. It is a sweet-and-savory dish that fills the whole kitchen with aroma and tastes even better the next day.

Step by step process

Preparing the meat base

    Bobotie is a South African baked meat casserole. Preheat the oven to 180 °C. Break the toast bread and soak it in 100 ml of milk, let it soak for 5 minutes, then squeeze it well.

    Finely chop the onion and press the garlic. Heat olive oil in a pan and sauté the onion with garlic for about 5 minutes until golden.

    Add the ground beef and sauté, stirring, until browned. Add the curry and turmeric and sauté for a minute.

    Stir in the squeezed bread, raisins, almonds, apricot jam, and lemon juice. Season with salt.

    Transfer the mixture into a greased baking dish, smooth the surface, and press 2 bay leaves into it on top.

Egg topping and baking

    Crack the eggs into a bowl, add 150 ml of milk, salt, and whisk smoothly with a fork.

    Pour evenly over the meat base and place the dish in the preheated oven.

    Bake at 180 °C for 35-40 minutes, until the egg topping turns golden and firms up to the touch.

Serving

    Remove the bobotie from the oven, take out the bay leaves, and let it rest for 5 minutes.

    Serve with rice flavored with turmeric and chutney or sliced banana.

More tips:

Do not overbake the egg topping, pull the bobotie as soon as it sets golden.

Serve it traditionally with turmeric yellow rice, raisins, and a fruity chutney.
