South African malva pudding with honey butter sauce

Malva pudding is a moist honey dessert from South Africa, baked since the days of the first Afrikaner settlers. Its secret lies in the apricot jam folded into the batter and the hot cream and honey sauce poured over the cake the moment it leaves the oven. The sugar caramelizes, the sponge drinks the sauce in and the result is a gorgeously wet, velvety dessert. It is traditionally served warm with vanilla ice cream or chilled custard. This is a sweet classic of every South African celebration.

Step by step process

Preparing the batter

    For the malva pudding, preheat the oven to 180 °C (355 °F). Melt the butter and let it cool slightly. In a large bowl, beat the sugar and eggs with an electric mixer until light and fluffy, about 4 to 5 minutes. Mix in the apricot jam and vanilla extract.

    Sift the flour and baking soda into the beaten egg mixture. Add the milk, vinegar and melted butter. Gently fold everything together with a spatula until a smooth batter forms without lumps. Pour the batter into a greased and floured round baking pan, 24 cm in diameter.

Baking and soaking with sauce

    Place the pan in the preheated oven and bake for 35 to 40 minutes, until the cake turns golden brown and a wooden skewer comes out clean. About 10 minutes before it is done, prepare the sauce. Combine the cream, butter, sugar, honey and vanilla extract in a saucepan. Heat over medium heat, stirring constantly, until the butter and sugar dissolve.

    As soon as the cake leaves the oven, prick the surface all over with a fork. Pour the hot sauce evenly over the warm cake so it soaks in. Let it rest for ten minutes. Serve warm with a scoop of vanilla ice cream or whipped cream.

More tips:

Prick the cake and pour the sauce over it straight from the oven, the warm sponge soaks it up best.

Serve it lukewarm with vanilla ice cream for that classic warm and cold pairing.
