Brazilian carrot cake with chocolate glaze bolo de cenoura

Step by step process
Preparing the batter

For the Brazilian carrot cake first peel the carrots and cut them into smaller rounds so they blend more easily. Put them in a blender with the eggs and sunflower oil and blend everything smooth, until you get a vivid orange and completely liquid mixture without any lumps.

Add the sugar and stir briefly so it starts to dissolve. Then gradually fold the sifted plain flour together with the baking powder into the wet mixture. Mix only briefly, until a smooth and moist batter without lumps forms.
Baking

Fill a greased and flour-dusted tin with the prepared batter and smooth the surface. Put it in an oven preheated to 180 °C and bake for about 40 minutes. You can tell it is done when a skewer inserted in the center comes out clean and dry.
Chocolate glaze

Meanwhile prepare the glaze. In a small pot mix the cocoa with sugar, butter and milk and set it over a low flame. Stirring constantly, cook for about 3 to 4 minutes, until the mixture thickens and turns beautifully glossy.
Finishing

Pour the hot glaze evenly over the still warm cake so it slowly drips down the sides too. Let it set completely and only then cut it into squares and serve.
More tips:
Blend the carrots really finely, the smoother the mixture the fluffier the crumb.
Pour the glaze while hot and runny, once cooled it sets and is hard to spread.
