Farofa starts with the prep. Dice the bacon finely, chop the onion and garlic and slice the spring onion into thin rings. Toasting the flour goes quickly.
The base

Render the bacon in a dry pan until golden so it releases its fat and crisps up. Add the butter, onion and garlic. Saute them until softened.
TIP:Sauté the onion over medium heat until golden or translucent. Add the garlic at the end and sauté briefly to release the aroma, but do not burn it.

Crack the eggs straight into the pan. Stir them until they set into small golden pieces.
Toasting the flour

Pour in the cassava flour. Toast it over low heat, stirring constantly, until it turns golden and smells of nuts.

Season with salt and pepper. Mix thoroughly so every grain is coated in fat and stays loose.
Serving

Sprinkle the finished side with sliced spring onion. Serve it warm with roast meat, beans or a grilled skewer.
More tips:
Render the bacon in a dry pan first, then add the butter and onion.
