Brazilian farofa with bacon

Eduard LáskaSide DishBrazilian Cuisine x se líbilo
Farofa is one of the most typical side dishes of Brazilian cuisine and appears at everything from a family lunch to a festive churrasco. The base is cassava flour, toasted in the pan with crispy bacon, onion and butter until golden. The result is loose, gently nutty and pleasantly savory. It is scattered straight onto the plate, where it soaks up the juices of meat and beans. Every region prepares it a little differently.

Farofa

Step by step process

Preparation

  1. 1

Farofa starts with the prep. Dice the bacon finely, chop the onion and garlic and slice the spring onion into thin rings. Toasting the flour goes quickly.

The base

  1. 2

Render the bacon in a dry pan until golden so it releases its fat and crisps up. Add the butter, onion and garlic. Saute them until softened.

    TIP:

Sauté the onion over medium heat until golden or translucent. Add the garlic at the end and sauté briefly to release the aroma, but do not burn it.

  2. 3

Crack the eggs straight into the pan. Stir them until they set into small golden pieces.

Toasting the flour

  1. 4

Pour in the cassava flour. Toast it over low heat, stirring constantly, until it turns golden and smells of nuts.

  2. 5

Season with salt and pepper. Mix thoroughly so every grain is coated in fat and stays loose.

Serving

  1. 6

Sprinkle the finished side with sliced spring onion. Serve it warm with roast meat, beans or a grilled skewer.

More tips:

Render the bacon in a dry pan first, then add the butter and onion.

Toast the flour over low heat and stir constantly, or it turns bitter.
