Traditional Brazilian beans feijão tropeiro

Feijão tropeiro is one of the best-loved dishes of the Brazilian backcountry and comes from the mountainous state of Minas Gerais. It once fueled the mule drivers who crossed the land hauling goods, so it leans on ingredients that keep well: beans, smoked bacon, sausage and toasted cassava flour. Eggs and fresh kale lift and brighten the whole plate. The result is hearty, crumbly and honestly rural.

Step by step process

Preparing the ingredients

    First prep all the ingredients. Dice the bacon and sausage, finely chop the onion and garlic and cut the kale into thin strips. Drain the beans.

Frying the meat

    Render the bacon in a pan until golden, add the sausage and fry it briefly. Stir in the onion and garlic and saute until translucent.

Eggs and beans

    Crack the eggs into the pan and stir until they set into small pieces. Add the drained beans and warm them through.

Cassava flour and greens

    Pour in the cassava flour and toast it, stirring constantly, until it lightly browns. Stir in the kale and let it wilt.

    Season with salt and pepper. Mix everything well so the flour coats evenly in the fat.

Serving

    Sprinkle the finished dish with sliced spring onion. Serve it hot with cooked rice.

More tips:

Swap the kale for collard greens called couve, common in Brazil, or young spinach.

Fine cornmeal or ground polenta can stand in for the cassava flour.
