Cooking the porridge

This blueberry oatmeal starts on the stove. Pour the milk into a pot, add a pinch of salt and bring it to a gentle simmer. Stir in the rolled oats and cook over low heat, stirring constantly, for about 5 minutes until the mixture thickens and the oats turn soft and creamy.

Take the pot off the heat, stir in the honey and let it rest for a minute so the flavors meld and the texture settles. If the base feels too thick, loosen it with a splash of warm milk until it turns smooth and creamy.
Blueberries and serving

Warm half of the blueberries briefly in a small pan until they burst, release their juice and form a light, glossy sauce. Leave the other half fresh and whole for both jammy and juicy bites.

Divide the warm base between two bowls, pour over the blueberry sauce and scatter the reserved fresh berries on top. Drizzle with a little extra honey to taste and serve straight away while everything is hot.
More tips:
For a creamier result use fine rolled oats. Coarser oats give a grainier texture and take longer to cook.
You can use frozen berries instead of fresh ones. Add them straight to the pot and cook a little longer.
