Preparation

Measure all the ingredients and let the butter soften at room temperature.
TIP:To quickly soften butter, cut it into thin slices and leave it at room temperature for 5-10 minutes. If you're in a hurry, briefly warm it in the microwave for 5-10 seconds until it's soft, but do not let it melt.

Measure the desired amount of semolina in a measuring cup.
Cooking

Pour the milk into a saucepan, add a pinch of salt, and heat over medium heat to just below boiling.

Whisking constantly, sprinkle the semolina in a thin stream and reduce the heat to medium-low.

Cook for about 10 minutes, until the porridge thickens and becomes completely smooth. keep stirring so it doesn’t stick to the bottom.

Stir in the granulated sugar and butter, mix thoroughly with a wooden spoon until creamy, and let it simmer for another 2 minutes.
Serving

Divide the porridge immediately into bowls or soup plates.

Top each serving with a pat of butter, dust with cocoa, and sprinkle with powdered sugar to taste.

Serve warm as a sweet breakfast or dinner.
More tips:
If you don’t like lumps, add the semolina to the boiling milk very slowly, whisking vigorously all the time.
You can make the porridge with low-fat or whole milk, according to your preference. For a silkier result, stir in a little cream.
