Rapeseed oil is a vegetable oil pressed from the seeds of the oilseed rape plant, and it is one of the most widely used cooking oils in Central Europe and beyond. It has a pale yellow colour, a neutral flavour, and a high smoke point, making it suitable for frying and baking as well as for cold dishes. It has a favourable fatty acid profile, rich in omega-3 and omega-9 fatty acids with a low saturated fat content. Refined rapeseed oil is ideal for high-temperature cooking, while cold-pressed virgin varieties retain more nutrients and are well suited to salads. It is an affordable and nutritionally valuable alternative to olive oil.
