Beef and Broccoli in Oyster Sauce

Beef and broccoli in oyster sauce is a classic Cantonese stir-fry you can pull off faster than takeout arrives. Thin slices of tenderloin go through so-called velveting, so the meat stays silky and tender. You blanch the broccoli only briefly, keeping it crisp and vivid green. In the wok, a glossy sauce of oyster and soy sauce with garlic and ginger coats everything at once. Serve it with steamed rice for a dinner that tastes like it came from a pro.

Step by step process

Marinating the meat

    Beef and broccoli in oyster sauce starts with the meat. Slice the tenderloin against the grain into thin pieces about 3 mm thick and put them in a bowl.

    Add the soy sauce, cornstarch, oil, baking soda, and sugar to the meat. Mix by hand until the slices soak up the liquid, then let it rest for 20 minutes. This step is called velveting and it keeps the meat tender.

    TIP: 

    Before quickly stir-frying in a wok, marinate the meat in soy sauce, wine, or another liquid with a little starch. It creates a delicate coating, keeps the meat juicy, and lightly thickens the sauce.

Blanching the broccoli

    Break the broccoli into small florets. Bring salted water to a boil in a large pot and cook the florets for 90 seconds so they stay crisp and bright green.

    Drain the broccoli in a colander and rinse it right away under cold water. This stops the cooking and keeps the color vivid.

Sauce and stir-frying

    In a small bowl, stir together the oyster sauce, both light and dark soy sauce, beef broth, sugar, sesame oil, and a teaspoon of cornstarch. Finely chop the ginger and garlic.

    Heat the wok until it is smoking hot, add the oil, and spread the meat slices in a single layer. Stir-fry for 2 minutes until browned, then set the meat aside.

    Toss the ginger and garlic into the wok, and after 20 seconds return the meat and add the broccoli. Pour in the sauce and stir for 2 minutes until it thickens and everything is coated in a glossy layer. Serve immediately with steamed rice.

    TIP: 

    Dissolve cornstarch in cold water to create a smooth slurry, then slowly add it to the hot sauce while stirring continuously. The sauce will thicken within 1-2 minutes without lumps.
