Ugandan stewed green bananas with beef sauce matoke

Preparing the beef sauce

Matoke starts with a rich beef sauce. Heat olive oil in a deep pan over medium heat and brown the diced beef on all sides for about 5 minutes. Add the finely chopped onion and cook for another 5 minutes until softened. Stir in the crushed garlic and turmeric and cook for one more minute.

Add the chopped tomatoes and diced red pepper. Pour in the beef broth and bring to a boil. Reduce the heat to low, cover and simmer for 25 minutes until the beef is tender and the sauce has slightly thickened. Season with salt to taste.
Preparing the plantains and serving

Peel the green bananas and cut them into larger chunks about 5 cm long. Place them in a pot of boiling salted water or steam them for 20 minutes until the plantains are tender. They should not fall apart, but a fork should pass through without resistance.

Ladle a generous portion of the beef sauce over the cooked plantains in deep bowls. Traditionally the dish is served in banana leaves, but it tastes just as good straight from a plate. Garnish with fresh parsley and serve hot.
More tips:
Choose the greenest plantains possible, ripe yellowing bananas fall apart and turn too sweet when cooked.
Simmer the sauce uncovered for the last few minutes, it thickens and gains deeper flavor.
