Beef peanut stew mafé

Preparing the meat and peanut base

Cut the beef for the mafé into 4 cm cubes and season with salt. Finely chop the onion, press the garlic and slice the chilli into rounds. Heat the oil in a deep pot over high heat and sear the beef on all sides until golden, about 5 to 7 minutes. Remove the meat and set it aside.

In the same pot, saute the onion over medium heat for 5 minutes until softened. Add the garlic and chilli and cook for another 2 minutes. Stir in the tomato paste and peanut butter, pour in 500 ml of water and mix thoroughly into a smooth sauce.
Simmering the peanut stew until tender

Return the seared beef to the pot, bring to a boil and lower the heat to its lowest setting. Cover with a lid and simmer for 60 to 75 minutes, until the meat is tender and the sauce thickens to a creamy consistency. Stir now and then and add a splash of water if the sauce gets too thick.

Season with salt and pepper. Serve the mafé over white rice or with bread. The sauce should be rich, velvety and clearly nutty, a hearty West African dish for the whole family.
More tips:
Sear the beef hard until golden, only then return it to the sauce.
Loosen the peanut butter with a little water first, then stir it in.
