Prep and shaping

Start the mini hamburgers with the meat: put the ground beef, finely chopped onion, salt and a pinch of pepper into a bowl. Mix the blend with your hand only lightly so the patties stay loose and juicy.

Shape the meat into 12 equal balls, then flatten each into a patty the size of a hamburger bun. Press a shallow dimple into the center of each with your thumb so they do not bulge while frying and stay flat.

For the burger sauce, mix the mayonnaise, ketchup and mustard in a bowl. Season to taste and set it aside.
Frying and assembling

Heat the oil in a pan and fry the patties for 3 minutes on each side. A minute before the end, lay a slice of cheddar on each one so it melts.

Cut the hamburger buns and briefly toast the bottom halves cut side down in a dry pan until they turn golden.

Spread the bottom bun with burger sauce, add the patty with cheddar, then layer on pickle slices and a ring of red onion. Cover with the top bun and pin it with a skewer.
More tips:
Do not oversalt the meat or knead it for long. The less you handle it, the juicier the patties will be.
Assemble the sliders right before serving. A warm bun and melting cheddar turn these small burgers into the star of any party.
