Meatloaf with potatoes
Ingredients
Step by step process
Preparation
- 1
Peel and finely chop the onion.
- 2
In a bowl, mix both types of ground meat, the egg, chopped onion, breadcrumbs, milk, mustard, ground black pepper, salt, and marjoram.
- 3
Work everything thoroughly with your hands until you have a cohesive mixture. If the mixture is too loose, add a little more breadcrumbs.
TIP:For a juicy meatloaf, a cohesive mixture is important. When mixing, use gentle motions and don't overdo it, or the mixture will become tough. Let it chill in the refrigerator for 15-30 minutes. The eggs, milk, and breadcrumbs should be balanced.
Cooking
- 4
Preheat the oven to 180 °C.
- 5
Grease the baking dish with cooking oil.
- 6
Shape the meat mixture into a loaf and place it in the baking dish.
- 7
Brush the meatloaf lightly with oil and bake in the preheated oven for 55-60 minutes. After 30 minutes, baste it with a little hot water or pan juices.
- 8
During baking, occasionally baste the meatloaf with pan juices to keep it juicy.
TIP:Regularly baste the meat during roasting with pan drippings, ideally every 15-20 minutes. The surface stays moist and juicy, and the gravy will taste better. If the pan drippings are not enough, add hot water or stock just enough so the gravy doesn’t thin out.
Serving
- 9
Let the meatloaf rest for 5 minutes. Slice it and serve with boiled potatoes or another preferred side dish.
More tips:
You can enhance the meatloaf by adding crushed garlic or a pinch of nutmeg to the meat mixture.
For a more pronounced flavor, add finely chopped bacon or small cheese cubes directly into the mixture.
