Slovak Bean Soup with Sausage

Frying the base

The base of this bean soup with sausage starts by frying. Heat the rapeseed oil in a pot and fry the finely chopped onion until translucent, about 3 to 4 minutes. Add the pressed garlic and cook for another minute, stirring constantly. The onion is the base of the flavor, so do not rush it.

Cut the sausage into rounds or half-rounds. Add it to the onion and fry for 3 to 4 minutes until lightly browned and the fat is released.
Cooking

Add the sliced carrots and diced celery. Stir in the tomato paste and sweet paprika and add the bay leaves. Pour in the water and bring to a boil.

Rinse the canned beans under cold water and add them to the pot. Reduce the heat and simmer for 25 to 30 minutes until the vegetables are tender. Stir now and then so nothing sticks to the bottom.

Stir in the marjoram and season with salt and pepper. Remove the bay leaves before serving. Serve hot with bread or rolls. A spoonful of sour cream on top is a welcome touch.
More tips:
Instead of canned beans, cook dried ones soaked overnight for better flavor.
A spoon of vinegar or ketchup at the end deepens the taste nicely.
