Lentil soup with smoked sausage and vegetables

Lentil soup where brown lentils simmer with carrot, parsley root, and celery until tender, while smoked sausage lends a smoky depth. Marjoram, garlic, and a pinch of sweet paprika season it, with a drop of vinegar at the table for a fresh note. Thicken it with a flour roux, or leave it brothier and serve with a slice of bread.

Step by step process

Preparation of ingredients

  1. 1

To start this hearty lentil soup, rinse the lentils under cold water and let them drain.

  2. 2

Peel the carrot, parsley root, and celery, and cut them into small cubes.

  3. 3

Peel the onion and garlic. Finely chop the onion, mince the garlic.

  4. 4

Cut the smoked sausage into thin, even slices so it releases its flavor.

Roasting and cooking the base

  1. 5

In a pot, heat the oil and cook the onion until translucent.

  2. 6

Add the sliced sausage and fry briefly until it releases fat and becomes fragrant.

  3. 7

Stir in the carrot, parsley, and celery and sauté for 3-4 minutes.

  4. 8

Add the garlic and sweet paprika, stir briefly to prevent the paprika from becoming bitter.

Cooking soup

  1. 9

Add the rinsed lentils and pour in the vegetable broth.

  2. 10

Bring to a boil, reduce the heat, and cook covered for about 30 minutes until the lentils are tender.

  3. 11

Add water as needed if the soup reduces too much.

Seasoning and possible thickening

  1. 12

Salt the soup, pepper it, and add marjoram.

  2. 13

If you want to thicken the soup, mix plain flour in a little cold water and pour it into the soup while stirring constantly. Cook for another 5 minutes.

Serving and finishing

  1. 14

Divide the soup into bowls, garnish with chopped fresh parsley.

  2. 15

Serve with a slice of fresh bread.

More tips:

For a more pronounced flavor, you can blend part of the sausage directly in the soup.

Soup is even tastier the next day because the flavors beautifully meld together.
