Slovak Mushroom Soup with Potatoes

Preparation

For the mushroom soup, first soak the dried mushrooms: pour 300 ml of hot water over them and leave for 20 minutes. Do not discard the liquid, you will add it later.

Clean the fresh mushrooms and slice them. Peel the onion, carrot and potatoes. Finely chop the onion, cut the carrot into rounds and dice the potatoes. Press the garlic.
Cooking

Melt the butter in a pot and saute the onion until golden, about five minutes. Add the pressed garlic and stir for a minute. The onion should turn glassy, not brown, or the base turns bitter.

Add the fresh mushrooms and saute for five to six minutes until they release their liquid and lightly brown.

Dust with plain flour and cook briefly. Add the carrot, potatoes, soaked pieces and their liquid, then pour in the vegetable stock.

Bring to a boil, season with salt and pepper and add the caraway and marjoram. Simmer over low heat for 20 minutes until the potatoes are tender.
Finishing

Take the pot off strong heat, stir in the cream and warm it through for two minutes so it does not curdle. Taste and adjust the salt. Serve sprinkled with fresh parsley.
More tips:
Do not throw away the dried mushrooms, add their soaking liquid for a deep forest aroma.
No wild mushrooms? Use button mushrooms or a mix with dried ones.
