Slovak potato soup with smoked pork

Potato soup is one of Slovakia's favorite dishes during the cold months, and every region prepares it a little differently. Smoked pork shoulder gives it a bold smoky flavor. Root vegetables with carrot and parsley lend a full body, and sour cream thickens it to a velvety smoothness. Marjoram brings the aroma of mountain village kitchens. The ingredients are humble. Yet the pot feeds the whole family and tastes even better the next day. Serve it hot with a slice of fresh bread.

Step by step process

Preparation

    Start the Slovak potato soup by preparing the ingredients. Cut the smoked pork shoulder into 1 cm cubes. Keep the pieces even. Finely chop the onion, peel the carrots and parsley root and slice into rounds. Press the garlic, then peel the potatoes and cut into cubes.

Cooking

    Heat the sunflower oil in a pot and saute the onion until golden, about 3 minutes. Add the carrots with parsley root and saute for another 2 minutes. Add the pressed garlic and stir briefly. Do not let it burn.

    Add the smoked pork shoulder cubes and saute for 2 minutes. Stir in the sweet paprika, mix well and pour in 1.5 liters of water. Bring to a boil.

    After the first boil, reduce the heat to medium and cook for 10 minutes. Add the potatoes and cook for another 15 minutes. They should be completely tender.

Finishing

    Stir in the sour cream and add the marjoram. Season with salt and pepper to taste. Simmer for another 3 minutes. Serve hot with fresh bread or rolls.

More tips:

Mash some of the cooked potatoes with a fork and return them. The soup thickens nicely without flour.

Stir the sour cream in at the end off the boil. It stays smooth and will not curdle.
