Marinade and Ribs Preparation

A good marinade is the key to juicy pork ribs in beer. In a bowl, mix the dark beer, honey, mustard, Worcestershire sauce, tomato paste, sweet paprika and caraway. Press the garlic and slice the onion. Add them to the marinade. Cut the ribs into portions of 2 to 3 bones, salt and pepper them and place in the marinade. Let it marinate for at least 1 hour, ideally overnight in the refrigerator.
Slow Roasting

Preheat the oven to 160 °C. Remove the marinated ribs from the marinade and place them in a roasting pan with the onion and garlic. Pour over all the remaining marinade. Cover the pan tightly with foil so the meat braises in its own juices.

Roast covered for 90 minutes at 160 °C. Then remove the foil and raise the temperature to 200 °C. Roast for another 20 to 25 minutes until the ribs brown and gain a crispy caramel crust.
Finishing and Serving

Pour the juices from the pan into a small saucepan. Reduce over medium heat for 5 to 10 minutes until it thickens into a rich beer sauce. Serve the ribs drizzled with the sauce alongside fresh bread or roasted potatoes.
More tips:
Marinate the ribs overnight in the refrigerator. Dark beer and honey give them a deep caramel taste.
Watch the final stage of roasting. Without foil at 200 °C the crust darkens fast.
