Step by step process

Preparation

    Peel the potatoes and grate them finely on a small grater to make a mash. Lightly squeeze out any excess liquid so the dough isn't too watery.

    Place the grated potatoes in a bowl, add coarse flour, egg, and a pinch of salt. Work into a dense, sticky dough, add more flour if needed so the dough holds its shape when pressed through.

    TIP: 

    When preparing the dough, add the flour gradually and mix until it is firm but not too stiff, so it retains its shape during further processing.

    In a small bowl, combine ground poppy seeds with powdered sugar to make an even poppy seed-sugar mixture and set aside for later use.

    Put the butter in a small saucepan and melt on low heat, or in the microwave, so it remains liquid and warm.

Cooking

    Bring a large pot of water to a boil and salt it. Once boiling, reduce to a gentle simmer to keep the dumplings from breaking apart.

    TIP: 

    Cook halušky or pasta in a large amount of well-salted water at a gentle boil. Stir regularly to prevent them from sticking to the bottom and to each other, and after cooking, quickly drain and rinse with cold water if you don't want the cooking to continue.

    Using a spaetzle maker (or a small spoon), press bits of dough into the simmering water. Work in batches to keep the dumplings from sticking or overcrowding. Once the dumplings float to the surface, cook for another 2-3 minutes until soft inside.

    Carefully remove the cooked dumplings with a slotted spoon or sieve, let them drain briefly, and while still warm, transfer to a large bowl. Pour in some of the melted butter and gently toss the dumplings so they don’t stick and stay soft.

    TIP: 

    Immediately after cooking, drain the pasta or dumplings and toss them with a bit of melted butter or oil. This step prevents sticking and keeps the pasta tender and flavorful when serving.

Serving

    Evenly sprinkle the hot dumplings with the poppy seed-sugar mixture and spread them in the bowl so each piece is coated. Gently mix so the topping covers them completely.

    On the plate, drizzle each portion with the remaining melted butter and, if desired, add extra poppy seeds or powdered sugar. Serve immediately while hot and fragrant with butter.

More tips:

Adjust dough consistency with flour: if it’s too runny, add 1-2 tablespoons of flour so the dumplings hold their shape when pressed through.
