Pickled ginger, known in Japan as gari, is a traditional accompaniment to sushi and sashimi. Thin slices of fresh ginger are pickled in a mixture of rice vinegar, sugar, and salt, giving them their characteristic sweet-sour flavor and signature pale pink to white color.
