Cheddar is one of the most widely consumed cheeses in the world, originating from the county of Somerset in England. It is made from cow's milk and undergoes a process called cheddaring, in which the curds are cut, heated and pressed. Its colour ranges from pale yellow to orange, and the intensity of flavour depends on ageing, mild cheddar is creamy and gentle, while mature cheddar is sharp and full-flavoured. In the kitchen, it is prized for its excellent melting properties and suits burgers, toasties, sauces, gratins and baked dishes alike. It is a rich source of calcium and protein.
