Step by step process

Preparation

    Peel the onion and slice into thin half-moons. Split the buns lengthwise but don't cut them all the way through.

    Lightly score the sausages diagonally a few times on the sides so they don't burst while grilling.

    TIP: 

    For even cooking, score the sides of the sausages with shallow diagonal cuts. Heat will penetrate more quickly, the sausages will not burst, and they will cook through more evenly.

    Preheat a grill pan over medium heat and prepare a second pan for the onions.

Cooking

    Add the butter and olive oil to the pan for the onions, let the butter melt, then add the sliced onion with a pinch of salt. Sauté slowly over medium-low heat for 12-15 minutes, stirring occasionally so the onions brown evenly.

    Sprinkle in the granulated sugar, stir, and sauté another 3-4 minutes until the onions sweeten and caramelize. Drizzle with balsamic vinegar and cook briefly until sticky. Season with freshly ground black pepper to taste.

    Meanwhile, brush the grill pan with a little sunflower oil and sear the sausages on all sides for 5-7 minutes, until heated through and lightly crusted.

    Toast the split buns cut-side down on the dry grill pan for 30-60 seconds so they become fragrant and crispy. If using cheddar, place a slice on the hot sausage and let it melt slightly.

Serving

    Place the grilled sausage into the toasted bun and top with a generous portion of caramelized onions.

    Serve immediately and offer ketchup and whole-grain mustard to taste.

More tips:

If the onions are darkening too quickly, lower the heat and add a tablespoon of water. Caramelization should be slow to avoid bitterness.

For extra juiciness, spread a thin layer of butter inside the bun and toast briefly before adding the sausage.
