Grilled Hot Dog with Caramelized Onions

Peel the onion and slice into thin half-moons. Split the buns lengthwise but don't cut them all the way through.

Lightly score the sausages diagonally a few times on the sides so they don't burst while grilling.
TIP:For even cooking, score the sides of the sausages with shallow diagonal cuts. Heat will penetrate more quickly, the sausages will not burst, and they will cook through more evenly.

Preheat a grill pan over medium heat and prepare a second pan for the onions.

Add the butter and olive oil to the pan for the onions, let the butter melt, then add the sliced onion with a pinch of salt. Sauté slowly over medium-low heat for 12-15 minutes, stirring occasionally so the onions brown evenly.

Sprinkle in the granulated sugar, stir, and sauté another 3-4 minutes until the onions sweeten and caramelize. Drizzle with balsamic vinegar and cook briefly until sticky. Season with freshly ground black pepper to taste.

More tips:
If the onions are darkening too quickly, lower the heat and add a tablespoon of water. Caramelization should be slow to avoid bitterness.
