Vegetarian hot dog comes together in a lighter version with a grilled veggie sausage, caramelized onion, and pickles. You fry the onion slowly for about 9 minutes until golden and caramelized, and sear the sausage on all sides. You toast the inside of the bun briefly in a dry pan until crisp. You tuck the sausage into the warm bun, add onion and pickle, and finish with mustard and ketchup.

Step by step process

Prep the vegetables and buns

    A great vegetarian hot dog starts with well-prepared ingredients. Peel the onion and slice into thin half-rings, and cut the pickles into lengthwise slices.

    Cut the hot dog buns lengthwise without cutting all the way through so they remain connected.

    Have the veggie sausages, mustard and ketchup within reach so assembly goes quickly.

Fry the sausages and onion

    Heat a little sunflower oil in a pan over medium heat. Add the onion and fry for about 9 minutes until golden, stirring occasionally so it caramelizes evenly without sticking.

    TIP: 

    Slow sauté over low heat with occasional stirring. At the end, add a pinch of sugar and a little water or stock for deglazing, releasing the caramelized bits and developing a rich onion flavor.

    Lightly season the onion with salt and pepper, stir and push to the edge of the pan to keep warm.

    Clear the centre of the pan and fry the sausages on all sides for about 6 minutes. Turn them every 2 minutes for even browning. They are ready when heated through and lightly golden.

    Toast the inside of the buns in a dry pan for about 2 minutes. Keep the heat at medium and let them sit flat against the pan so the surface crisps up evenly.

    TIP: 

    Heat a dry skillet over medium heat and briefly toast the cut side of the bun down until it takes on a light golden color. For even browning, gently press it with a spatula and briefly toast the other side as well.

Assemble and serve

    Tuck the sausage into the warm bun. Add a generous spoonful of golden caramelized onion and a few slices of pickle for a tangy kick.

    Season with mustard and ketchup to taste and serve immediately while the buns are still crisp.

More tips:

Do not pierce the veggie sausages before frying. They will stay juicier.

Toast the buns in a dry pan just before serving. Once they cool down they soften and lose their crispness.
