Waldorf salad with apples and walnuts

Waldorf salad is a New York classic that still delivers a hundred years on. Crisp apples, celery, walnuts and juicy grapes come together in a light dressing of mayonnaise and yogurt with lemon. The result is fresh, crunchy and sweet-savory at once. It is served chilled on a lettuce leaf as a starter or a light dinner, and you can put it together in a few minutes.

Step by step process

Preparation

    For the Waldorf salad, wash the apples, core them and dice them with the skin on. Sprinkle them right away with lemon juice so they do not brown.

    Slice the celery thin, halve the grapes and coarsely chop the walnuts. Set a few walnuts aside for garnish.

Dressing and mixing

    In a bowl, stir the mayonnaise, plain yogurt and the rest of the lemon juice into a smooth dressing. Season with salt and pepper to taste.

    Gently fold the diced apple, celery, grapes and chopped walnuts into the dressing until every piece is coated. Chill in the fridge for at least 20 minutes so the flavors come together.

    Serve chilled on lettuce leaves and sprinkled with the remaining walnuts. It tastes best fresh, and softens the next day.

More tips:

Choose crisp, tart apples like Granny Smith. A mealy variety turns mushy in the salad.

Mix the salad with the dressing just before serving. The apples and celery stay crisp and do not release water.
