Refreshing apricot smoothie with honey

First wash the ripe apricots under cold water. Halve them, remove the stones and check that none are bruised. If they have a tougher skin, blanch them briefly in boiling water and peel. Cut the soft flesh into smaller pieces so it blends more easily, and place it in the blender jug. The riper the fruit, the sweeter the drink.

Add the chilled white yogurt and cold milk to the prepared apricots. Drizzle everything with honey and drop a few ice cubes into the blender. Blend for about a minute until the drink is smooth and frothy. No lumps. If the mixture is too thick, pour in a little milk or water. Thicken a thinner result with a spoonful of yogurt. Finally taste and adjust with more honey.
Serving

Pour the finished drink straight into two tall chilled glasses. Decorate the rim with a slice of fresh apricot or a sprig of mint. Serve right away, while it is fresh and beautifully cold. Standing makes it lose its full flavor and start to separate. If you do leave it a while, stir it briefly again before drinking.
More tips:
Use well ripened, sweet apricots, sour fruit makes a less delicious drink.
For a thicker smoothie reach for frozen apricots and skip the ice.
