Overnight oats with yogurt and fruit

Overnight oats are a cold breakfast you prep at night and simply top the next morning. The rolled oats soak up plain yogurt and milk overnight, while chia seeds thicken the mix into a creamy spoonful. They do the work for you by morning, so all that is left is a handful of fresh blueberries, banana slices and chopped walnuts. They also travel well as a grab-and-go jar and keep you full until lunch.

Step by step process

Soaking overnight

    Start the overnight oats by adding the rolled oats and chia seeds to a jar or a tall glass. Stir them briefly while they are still dry, so the chia is spread evenly through the oats and does not clump later.

    Pour in the plain yogurt and the milk. Mix everything thoroughly until you get a thick, cohesive porridge with no dry pockets or lumps hiding at the bottom.

    TIP: 

    When soaking chia seeds, stir the mixture regularly to prevent the seeds from clumping and to keep the pudding smooth. If needed, stir after 5-6 minutes and again after 10 minutes.

    Want it sweeter? Stir in the honey and mix again until smooth, so the sweetener dissolves evenly through the whole mixture.

    Cover the jar with a lid or a piece of plastic wrap. Chill it for at least 6 hours, ideally overnight, so the oats soften completely and soak up all of the liquid.

Morning assembly

    In the morning, give the oats a good stir and taste them. If they feel too thick after resting, loosen them with a spoonful of milk or a little extra yogurt until creamy.

    Peel the banana and slice it into thin rounds. Arrange the slices with a handful of fresh blueberries over the chilled oats.

    Scatter the chopped walnuts on top for a crunchy contrast. Serve it right away, or seal the jar and take it with you to work or school for later.

More tips:

Reach for thick rolled oats. Fine oats break down into a runny mush overnight.

They keep in the fridge for up to 3 days in the jar, but add the fruit only just before serving.
