Preparation

Thoroughly clean the crabs: remove the carapace, discard the gills and innards, rinse under cold water, and quarter the crabs. if needed, cut the claws into smaller pieces with kitchen shears.

Peel and roughly chop the onion, lightly crush the garlic, slice the ginger thinly, and cut the spring onions and chili peppers into pieces.
Cooking

Pour soy sauce, water, and mirin into a pot, add brown sugar, ground black pepper, onion, garlic, ginger, spring onions, and chili, and mix well.

Bring the mixture to a boil, reduce the heat, and simmer gently for 8-10 minutes to meld the flavors. Then strain the marinade through a sieve and let it cool completely in a bowl in the refrigerator.

Rinse the rice several times in cold water until the water runs clear. Add the measured water, bring to a boil, reduce heat, and cook until tender for 12-15 minutes. then let the rice rest covered off the heat.
Serving

Place the cleaned crab pieces into a clean container, completely cover them with the chilled marinade, weigh them down if necessary, seal the container, and marinate for 24-36 hours in the refrigerator.

Before serving, remove the crab from the marinade, cut larger pieces into portions with scissors if needed, serve chilled with hot rice, sprinkle with sesame seeds, and accompany with kimchi.
More tips:
Use the freshest or properly thawed crab and work hygienically. Always cool the marinade completely so the raw meat is not compromised by heat.
