Coffee frappé with absinthe

Preparation

Put the ice into the blender and set out 4 tall glasses.

Brew a strong black coffee (200 ml of espresso or cold brew) and let it cool. Pour the cooled coffee into a bowl, add sugar, and stir briefly.

Add the absinthe and milk if desired. Pour everything into the blender jug.
Blending

Blend on high speed for 30-45 seconds until a thick, stable foam forms and the drink is well chilled.

Divide the frappé with its foam between 4 glasses. Add a few extra ice cubes if you prefer a lighter consistency.
Serving

Garnish each glass with a lemon slice on the rim or drop one directly into the drink.

Serve immediately ice-cold. Anyone who prefers it sweeter can stir in a little sugar directly in the glass.
More tips:
For the richest foam, blend the coffee with water and sugar first. Add the absinthe and ice only just before the end of blending.
Absinthe has a strong anise flavour. Start with a smaller amount and add more to taste. A non-alcoholic version with anise syrup works well too.
