Irish Coffee with Whiskey and Cream

Step by step process
Preparing the glasses and cream

Preheat four Irish Coffee glasses (thick-walled, with a handle) with hot water, which you pour out after a minute, this prevents the glass from cracking and keeps the drink warm longer.

Pour chilled cream into a bowl, add a teaspoon of powdered sugar and whip it with a whisk to a semi-stiff consistency. The foam should be more liquid than classic whipped cream so it floats beautifully on the surface.
Preparing the cocktail

Add a teaspoon of brown sugar to each warmed glass and pour 40 ml of Irish whiskey over it. Stir briefly so the sugar begins to dissolve and the whiskey mellows in flavor.

Prepare strong fresh coffee or espresso and carefully pour it hot (about 120 ml per glass) into the whiskey and sugar mixture. Stir thoroughly with a spoon until the sugar is completely dissolved. the level should be about 2 cm below the rim.
Layering the cream and serving

Pour the semi-whipped cream very slowly over the back of an inverted spoon held just above the surface of the coffee. The cream will spread like a velvety layer on top and must not sink down, that is the whole magic of Irish Coffee.
TIP:Pour the cream slowly along the back of an inverted spoon just above the surface. The spoon gradually spreads it and creates a delicate layer. The key is slowness, rushing will cause it to sink.

Lightly dust the finished cocktail with a pinch of cinnamon or cocoa and serve immediately. It is drunk through the layer of cream, so never stir, the flavors blend only in the mouth.
More tips:
Whip the cream just enough so it thickens and holds the shape of a spoon, over-whipped stiff cream will sink to the bottom and the layering will not work.
Use ground coffee brewed in a moka pot rather than instant. the delicate aroma of Irish whiskey only shines alongside full-bodied, aromatic coffee.
