Onion dip starts with onions melted slowly in butter until the base turns golden, sweetens and thickens. That depth then gives the sour cream and mayonnaise a flavor raw onion never delivers. You stir everything together, fold in the chives and chill it well so the flavors settle. Serve it cold with potato chips, crunchy vegetables or fresh bread. Step by step process

Caramelizing in the pan

    For an onion party dip, first peel and finely chop the onion. Melt the butter in a pan and add the onion.

    Fry over low heat for about 20 minutes, stirring often so nothing burns. It gradually softens and releases a sweet aroma, then takes on a beautiful amber color. Once it is done, take it off the heat and let it cool completely. Patience pays off here, rushing brings a bitter aftertaste.

Mixing and chilling

    Meanwhile, whisk the sour cream with the mayonnaise in a bowl until smooth and creamy.

    Fold in the cooled caramelized mixture and the finely chopped chives. Stir just lightly so small pieces stay noticeable.

    Season with salt and pepper. Mix everything one last time, cover the bowl and chill for at least an hour so the flavors meld and the mass thickens to a scoopable consistency. Cold, it tastes more balanced than right after mixing.

More tips:

Caramelize the onion over lower heat and take your time, because a burnt onion turns bitter fast.

Make the dip a day ahead if you can, overnight in the fridge the flavors deepen and it thickens.
