Spinach Artichoke Dip
Ingredients
Step by step process
Spinach and artichokes
- 1
For the spinach artichoke dip, heat a little olive oil in a pan and briefly saute the pressed garlic.
- 2
Add the leaf spinach and let it wilt down completely, stirring often.
- 3
Drain the wilted spinach, let it cool, and squeeze out the excess liquid.
- 4
Drain the artichokes and chop them finely.
Cheese base and baking
- 5
In a bowl, beat the cream cheese with the sour cream until smooth, then stir in the grated parmesan with half of the mozzarella.
- 6
Fold the cooled spinach and artichokes into the cream and season with salt and freshly ground black pepper.
- 7
Transfer the mixture to a baking dish, smooth the top, and sprinkle with the remaining mozzarella.
- 8
Bake in an oven preheated to 200 °C for about 25 minutes, until the dip is golden and the surface begins to bubble.
- 9
Meanwhile, cut the bread and vegetables into bite-sized pieces.
- 10
Sprinkle the finished dip with chives and serve it hot straight from the dish with nachos, bread, and vegetables.
More tips:
Squeeze as much water as possible from the spinach, or the dip will turn runny.
Make the dip a day ahead and only bake it before serving, so the flavor deepens.
