Creamy Chicken with Spinach

Pat the chicken breasts dry, slice them lengthwise into smaller pieces, and season with salt and pepper on both sides.

Finely chop the garlic, grate the Parmesan, and use a spiralizer to cut the zucchini into long noodles.
Chicken and sauce

In a large pan, heat two tablespoons of olive oil and sauté the chicken over medium heat until golden brown on both sides.
TIP:Pat the meat dry well before searing and place it only in a thoroughly heated pan. Do not move it for the first few minutes so a golden crust can form and it stays juicy inside rather than steaming.

Once the meat is nearly done, remove it to a plate and add the chopped garlic to the same pan.

Briefly sauté the garlic until fragrant, add the spinach, and stir until it wilts and releases excess moisture.

Pour in the heavy cream, stir in the Parmesan and nutmeg, and let the sauce simmer gently for two to three minutes.
TIP:Cook the cream sauce only over low heat, and add the cheese gradually to hot liquid that is not at a rapid boil. It will stay smooth, combine well, and the fat will not separate from the proteins.

Return the chicken to the pan, coat it with the sauce, and season with salt and freshly ground black pepper to taste.
Zucchini noodles

In another pan, heat a tablespoon of olive oil and sauté the zucchini noodles over higher heat for just one to two minutes.
TIP:Sauté zucchini noodles briefly over high heat and in small batches so they sear instead of steam. Season with only a little salt and only at the end, because salt draws out water and the noodles will soften quickly.

While sautéing, gently toss the zucchini noodles, lightly salt them, and remove them from the heat once they soften but remain firm.
Serving

Divide the warm zucchini noodles onto plates, top with the chicken, and drizzle everything with the creamy spinach sauce from the pan.

Serve immediately to keep the sauce velvety and the zucchini noodles with a pleasant texture.
More tips:
Sauté the zucchini noodles really only briefly. otherwise, they will release a lot of water and lose firmness on the plate.
If you want to thicken the sauce without flour, let it simmer for an extra minute and add a bit more Parmesan.
