Creamy Chicken with Spinach

Pat the chicken breasts dry and slice them lengthwise into smaller pieces. Season with salt and pepper on both sides. This seasoning is the base for a great creamy chicken.

Finely chop the garlic, grate the Parmesan, and use a spiralizer to cut the zucchini into long noodles.
Chicken and sauce

In a large pan, heat two tablespoons of olive oil and sauté the chicken over medium heat until golden brown on both sides.

Once the meat is nearly done, remove it to a plate and add the chopped garlic to the same pan.

Briefly sauté the garlic until fragrant, add the spinach, and stir until it wilts and releases excess moisture.

Pour in the heavy cream and stir in the Parmesan and nutmeg. Let the sauce simmer gently for two to three minutes.

Return the chicken to the pan and coat it with the sauce. Season with salt and freshly ground black pepper to taste.
Zucchini noodles

In another pan, heat a tablespoon of olive oil and sauté the zucchini noodles over higher heat for just one to two minutes.

Gently toss the zucchini noodles while sautéing and lightly salt them. Remove from heat once they soften but remain firm.
Serving

Divide the warm zucchini noodles onto plates, top with the chicken, and drizzle everything with the creamy spinach sauce from the pan.

Serve immediately to keep the sauce velvety and the zucchini noodles with a pleasant texture.
More tips:
Sauté the zucchini noodles really only briefly. Otherwise, they will release a lot of water and lose firmness on the plate.
If you want to thicken the sauce without flour, let it simmer for an extra minute and add a bit more Parmesan.
