Purple corn (maíz morado) is a traditional corn variety native to the Peruvian Andes, characterized by its deep dark purple, almost black color. The intense hue comes from a high content of anthocyanins, powerful antioxidants that place it among superfoods. It has a mildly nutty, slightly sweet flavor. In Peru it is the base of chicha morada, a traditional refreshing non-alcoholic drink made from purple corn, pineapple, lemon, cinnamon, and cloves, and the dessert mazamorra morada. It also works in colorful tortillas, soups, and modern fusion dishes.
