Perilla

Perilla, also known as shiso (Perilla frutescens), is an aromatic herb of the mint family used in Japanese, Korean, and Vietnamese cuisine. Its leaves have a distinct mint-basil flavor with notes of anise and citrus. Two main varieties exist: green (aojiso) for sushi, sashimi, and tempura, and red (akajiso) for pickling umeboshi and coloring plum vinegar. In Korean cuisine, kkaennip (perilla) is stuffed with meat or used for ssam wraps. The leaves are eaten fresh, dried, or pickled.
