Juniper
Juniper is a shrub whose blue-black berries have been used as a spice for centuries. They have a resinous, slightly bitter and aromatic flavor with hints of citrus and pine. In the kitchen, they are most commonly used in preparations of game, pork, cured meats and sauerkraut. They are also a key ingredient in the production of gin. The berries are added whole or crushed to marinades, sauces and pickled dishes. Juniper also has a long tradition in folk medicine for its antiseptic and diuretic properties.
