Ground Poppy Seeds
Ground poppy seeds are produced by milling dried poppy seeds and, compared to whole seeds, they release a significantly more intense and fuller flavour. The milling process releases the oily components, giving the resulting dough, filling or topping a richer and creamier character. In the kitchen they are used primarily as the base for poppy seed fillings in strudels, poppy seed rolls, cakes or cottage cheese dumplings. Simply mix with sugar, milk and optionally lemon zest for a quick and delicious filling. Compared to whole seeds they spread more easily through dough. For the best flavour it is recommended to grind them fresh just before use.
