Dried hibiscus flowers are the dried calyces of roselle (Hibiscus sabdariffa), with a vivid ruby-red color and a pleasantly tart, cranberry-like fruity taste. They are most often used to make hibiscus tea and the Mexican drink agua de Jamaica, as well as syrups, compotes, jams, marinades, and non-alcoholic and alcoholic cocktails. Steeped in hot water they release a deep red infusion rich in anthocyanins and vitamin C. Store dry, dark, and airtight.
